Dressing/vineigrette recipe

Great sweet onion vinaigrette recipe that can be tweaked for other flavors such as rasberry by adding a 1/2 of rasberries (fresh or frozen) to the recipe.

This is much more flavorful than the store bought brands. It also makes a good marinade or baste for meats.


Ingredients
1 Vidalia or other sweet onion
3/4 cup sugar
1/3 cup vinegar (original recipe called for basalmic but I used regular white vinegar and got excellent results)
1 tablespoon dry mustard
1 tsp salt (i used sea salt)
1 cup olive oil (remember different olive oils taste different, but I used kirkland extra virgin)
1 1/2 tsp poppy seeds

Preparation
Pulse onion in a food processor just until finely minced. Add sugar and next 3 ingredients, process until well combined. With processor running add oil in a slow steady stream. Stir in poppy seeds
